Akaushi Picanha

Each Akaushi Picanha typically weighs between 1.5 and 2.5 pounds. They are also known as the top sirloin cap, rump cover, rump cap, or culotte. We suggest going low & slow, leaning it medium rare and slicing against the grain. They are most similar to a tri-tip.
